PDD-NOS and the Gluten-free Casin-free diet...please help a desperate mom?

My 2 yr old son was just diagnosed PDD-NOS. We just found this out and I am on numerous wait lists for follow ups with neurologist, psychiatrists, therapist....and every other type of "ist" you can imagine. But in the meantime, I want to start a Gluten-free Casin-free diet immediately. Can anyone recommend any websites that break down the diet and can give me examples of what a typical "breakfast" "lunch" and dinner would be? Basically I want a crash course until I can get through a few books which will probably take me a week or so. I already got the okay from my pediatrician to start the diet, but she told me not to be surprised if I don't see any improvements.

I will be going to Borders tomorrow to pick up whatever books I can find as well. If anyone can recommend any books too, I would greatly appreciate it.PDD-NOS and the Gluten-free Casin-free diet...please help a desperate mom?
In my understanding, casein can be found in milk or any products that may contain milk or dairy products. My suggestion is Katz gluten free bread, they have this list of gluten free bread that are also dairy free w/c means casein free also. They have here different kinds of GF and casein free bread that is perfect for any types of breakfast and even lunch and dinner. Just add some veggies, fruits and gluten free recipe that you want to partner the GF bread with for as long as its also casein free.
